• 1 large or 2 medium head white cabbage (cornhead, white flat, cannonball varieties)
• 2 cups rice (arborio, baldo or similar) about 300 g
• 1.25 cup olive oil, about 250 ml
• 5 onions
• 2 tbsp pine nuts
• 2 tbsp black currants
• 1/2 tsp black pepper, powdered
• 1 tsp allspice / pimento
• 1/2 tsp cinnamon, powdered
• 2 tsp dried mint
• 1 tbsp sugar
• 3 tsp salt
• Juice of 1/2 lemon (optional)
• Hot water, about 3 cups

As far as I know when it comes to ottoman cuisine, Sautéed meat is not common, it makes the meat harder than desired. I think meat is cooked slowly to be soft and somewhat dissolve in your mouth, but I'm not the expert so take this as a grain of salt

I do this when I have leftover rice and chicken stock - I add greens like chopped spinach or chard sauteed with some onion, then add the rice , some fresh chopped garden mint and chicken stock, then the yoghurt mix -you can also add lamb meatballs (kofte) if you want it more filling - if you want a lighter dish, you can use low fat yoghurt and leave out the butter, egg and flour, but it's more luxurious and satisfying with the egg flour mix and butter. you can also add some spicy paprika or hot pepper to the melted butter. you can also add a few shelled broad (fava ) beans, which is nice. If you like this, you should try the Balkan dishes Tarator and Cacik - also Polish Miseria salad, and maybe even Bialy Barzc/gzurek (polish white borscht), which doesn't have yoghurt but is a white, sour soup.

Very nice. I've been making meat Ukrainian cabbage rolls with tomato sauce for 55 years so far. I start a week early to ferment my cabbage leaves into sour cabbage. You may want to try it , too, as a fun experiment. Yours look delicious and I will try them. I make them by holding the leaf in my hand. I just made several hundred last week for the deep freezer. Thanks for a new idea!

Almost the exact same recipe we follow here in Mosul/Iraq The traditional way is to use raw meat for filling, while the modern way is to use precooked , without the Rice and eat it with soup 🌹
